Job Description

【Position】 
 Specialty Chef

【Summary】
The Specialty Chefs are responsible for preparing Japanese dishes and specialty food items that require a high level of knife handling skills and knowledge of breaking down (cleaning) various cuts of beef, fish, and seafood.   They are responsible for setting up necessary supplies for their work area and preparing dishes for guests following company recipes.  

【Essential Duties】

• Oversee and manage assigned positions on the line to prepare Japanese and specialty food dishes including Sushi, Robata, and Meat Cutting stations.
• Assist with food deliveries including inspection of food items/ingredients to ensure quality and freshness.
• Inspect raw and cooked food items to guarantee that the highest quality products are prepared and served to customers.
• Prepare all menu items associated with the assigned position on the line to order, this may include hot and cold dishes as well as the fry and wok stations at Izakaya
• Restaurants.
• Oversee and manage kitchen workstations to prepare Japanese and specialty food dishes.
• Prepare all meat, fish and seafood items carefully following company recipes and meeting company standards for portion size and proper plating.
• Use an electric meat cutter safely for thinner cuts of meat such as sukiyaki and tongue.
• Ensure that “Tokyo Style” dishes are prepared properly and consistently follow the company recipe.
• Inspect raw and cooked food items to guarantee that the highest quality products are prepared and served to customers.
• Assist with food deliveries including inspection of food items/ingredients to ensure quality and freshness.
• Ensure that all food preparation follows company recipes and is prepared in a manner so that it is deemed fit for consumption by the customers.
• Look for ways to reduce spoilage of infrequently used items, even perishable.
• Assist in determining food inventory needs, stocking, organization, and ordering.
• Reports all irregular issues and problems with kitchen equipment to Restaurant Manager.
• Comply with all Company policies as communicated in the Employee Handbook.
• Work as part of a team to ensure Company quality and standards are upheld.
• Other tasks that may be assigned from time to time.

【Qualifications】

• Ability to effectively communicate with management in English. 
• Ability to respond to questions from the general public regarding restaurant products.
• Ability to interact with all levels of management.
• Ability to fillet fish or process meat
• Minimum 3 years of experience in a Japanese restaurant
• Japanese language skills are a big plus
• Interest in and understanding of Japanese food culture
• Availability to work on weekends
